Wrapped in flaky pastry sheet, cut open the classic British wellington to reveal a variation made with perfectly-baked tender salmon, blanketed with earthy duxelles and zucchini slices that delivers an extra punch of umami to the centrepiece dish. Serve it with a side of hollandaise sauce-drizzled sautéed asparagus and rustic roasted potatoes that is crispy at every bite. Finally, close the meal with a glass of rich eggnog to mark a sweet ending.
