Recipe is originally developed from Japan & transmitted from Portugal.
Castella sponge has a finer and much compact texture compare to the traditional sponge cake. The texture is lighter than the usual pound cake or butter cake.
It’s this lesson you will be learning the technique to bake using the water bath method. This technique adds moisture to the oven while baking, resulting a consistent and slow heat sources within the oven.
